Domain Name tags are simply labels that you can apply to Domain Names (or other Netistrar assets) for sorting, filtering and billing.
To set a tag
From Dashboard > Domains > YOURDOMAIN.COM > Tags
Simply select (check) any tags that pre-exist, or create a new tag.
You can then filter assets by any tags, as follows.
From Dashboard > Domains
